The Story of Wicho and Santa Isabel:

 

Luis “Wicho” Valdés III, a visionary and the fifth-generation producer at Finca Santa Isabel, stands at the forefront of cultivating some of Guatemala’s most distinguished coffees. Nestled within the unique, mountainous region of Alta Verapaz, Cobán, the 300-hectare Santa Isabel Estate thrives under Wicho’s stewardship. The estate’s rich history, dating back to 1875, is complemented by its cool climate, dense rainforest, and the high rainfall typical of this coffee-growing haven.

 

Wicho, inheriting a legacy that began with his family’s acquisition of the land in the 1960s, has dedicated the past twenty years to refining the art of coffee production. His expertise extends across two farms, Santa Isabel and San Lorenzo, where he grows coffee and processes it at the Santa Isabel mill—a testament to his family’s enduring connection to these lands since 1985.

 

Under Wicho’s watchful eye, the Santa Isabel Estate has become a sustainable, high-quality coffee production model. He is relentlessly pursuing farm improvements to enhance coffee quality while preserving the natural environment. His latest venture into using natural microorganisms to treat coffee trees is a bold step towards eliminating pesticide use and reducing fungicide reliance, showcasing his commitment to eco-friendly farming practices.

 

The culmination of Wicho’s meticulous efforts is a unique selection of coffee from Santa Isabel. The sweetest and most floral beans are selected and combined through a rigorous cupping process for each day-lot. This process results in a vibrant and complex coffee embodying Santa Isabel’s rich heritage and Wicho’s innovative spirit.
